This Toasted Marshmallow Ninja Creami S’mores Ice Cream is the perfect healthy treat for campfire lovers! Packed with protein and fluffy marshmallow flavor, this is a fun Ninja Creami creation for adults and children alike. Top with crushed graham crackers, mini chocolate chips, and mini marshmallows for even more s’mores fun!

Is there anything better than S’mores? Seriously. I still remember when Dairy Queen did a S’Mores Blizzard of the Month and it was one of the BEST things I’ve ever eaten. S’mores ice cream has been on my mind ever since!

This recipe actually toasts a serving of marshmallows under the broiler to achieve the perfect toasted marshmallow flavor–an extra step, but still pretty easy to do and totally worth it!

The marshmallows also contribute to a fluffy, creamy texture in the ice cream base itself. This recipe was so much fun to create, and even MORE fun to eat!

Ingredients

To make this delectible S’mores Protein Ice Cream for the Ninja Creami, you need:

Mini Marshmallows – You need one serving (about 2/3 cup) for toasting in the oven, and more for additional toppings as desired.

Cottage Cheese – Cottage cheese is key for a thick, creamy, and smooth ice cream base. If you really can’t stomach the thought of cottage cheese, you can use Greek yogurt–but I PROMISE you won’t taste the cottage cheese!

Whey Protein Isolate – I used chocolate for this, but vanilla is fine, too. Choose the flavor you prefer most. This recipe has only been tested with whey isolate powder–if you use a different kind of protein powder, your results may vary.

Allulose – This is my preferred low-calorie sweetener for many reasons, including new research on its effect on blood sugar and appetite control. You can use whatever sweetener you like.

Coconut Milk – I love the low-calorie coconut milk beverage (unsweetened) for my Ninja Creamis! It doesn’t add many calories but still creates a delightful texture.

Vanilla bean paste or regular vanilla extract.

S’mores fixings for mix-ins like graham crackers, mini chocolate chips, and more mini marshmallows.

How to Make S’mores Protein Ice Cream

1. Toast the Marshmallows

Turn on the oven to Broil. Line a baking sheet with foil or parchment. Place the mini marshmallows on top. Broil for 1-3 minutes until toasted to your liking.

Keep an eye on those marshmallows! The broil setting can be tricky–they go from zero to burnt really quickly!

2. Blend Ingredients

Add the cottage cheese, protein powder, allulose, vanilla bean paste, toasted marshmallows, and coconut milk to the pint container. Blend with an immersion blender until smooth.

3. Freeze 24 Hours

Cover the pint container and freeze on a level surface for at least 24 hours.

4. Spin the Ice Cream

Install the pint container in your machine per the instructions. Press “Lite Ice Cream.”

When the spin completes, remove the pint container from the machine and check on the ice cream texture. If it is not yet smooth, put it back in the machine and press the “Re-Spin” button.

5. Add S’mores Fixings

While the ice cream is spinning, you can prep whatever s’mores mix ins you want. Crush some graham crackers, gather some mini chocolate chips, and get some more mini marshmallows.

Stir these into the ice cream when the spin completes. I do not recommend using the “Mix-In” cycle as that will chop all of these items up into bits too small to taste or enjoy.

6. Eat

When your ice cream is done, enjoy it!

  • 30 grams mini marshmallows - 2/3 cup
  • 100 grams cottage cheese - 1/2 cup
  • 44 grams whey protein isolate - 1 1/2 scoops
  • 2 tbsp allulose
  • 1 tsp vanilla bean paste
  • 1 cup coconut milk (beverage from the carton) - more if needed to reach fill line

  • mini chocolate chips
  • graham crackers
  • mini marshmallows

Instructions

  • Turn on the oven to Broil. Line a baking sheet with foil or parchment. Place the mini marshmallows on top. Broil for 1-3 minutes until toasted to your liking.
    30 grams mini marshmallows
  • Add the cottage cheese, protein powder, allulose, vanilla bean paste, toasted marshmallows, and coconut milk to the pint container. Blend with an immersion blender until smooth.
    100 grams cottage cheese, 44 grams whey protein isolate, 2 tbsp allulose, 1 tsp vanilla bean paste, 1 cup coconut milk (beverage from the carton), 30 grams mini marshmallows
  • Freeze the base mixture for at least 24 hours on a level surface in your freezer.
  • When ready to eat, install the pint container into your Ninja Creami machine per the manufacturer's instructions. Press "Lite Ice Cream". When the machine is done, check the texture. If desired, do a Re-Spin.
  • Prepare the mix-ins for your S'mores creami. When the ice cream is done, stir in the crushed graham crackers, mini chocolate chips, and mini marshmallows. Enjoy!
