Roasted Maple Pecans with Chinese Five Spice

These sweet and crunchy roasted maple pecans are perfectly spiced with Chinese Five Spice–a blend of cinnamon, star anise, anise seed, ginger, and cloves. They are an excellent snack or holiday gift! You won’t be able to stop munching these!
This is a simple roasted maple pecan recipe that also happens to be incredibly delicious. While I love typical candied or cinnamon-roasted pecans, I wanted to add my own flavor twist that would make these nuts stand out as truly unique.
Enter Chinese Five Spice! You’re likely familiar with all of the spices in Five Spice (cinnamon, star anise, anise seed, ginger, and clove), but this lovely blend adds depth and complexity beyond simply seasoning with cinnamon.
Ingredients
These roasted pecans are simple to make and need just a few simple ingredients.
You need:
- Pecan Halves (I use a whole bag from the baking section at Costco when making this large-batch recipe)
- Olive Oil
- Maple Syrup
- Sea Salt
- Chinese Five Spice Blend
You can buy a pre-made Five Spice blend, but if you can’t find Five Spice at your local grocery store, you can use equal parts of the individual spices listed above. If you can’t find both star anise and anise seed, you can substitute fennel or Szechuan peppercorns, as these are included in some versions of the five-spice blend.
How to Make Maple Roasted Pecans
1. Pre-heat Oven
Preheat the oven to 350° F. Line two large baking sheets with parchment paper.
2. Mix Ingredients
Combine all ingredients in a large mixing bowl and stir to evenly coat.
3. Spread in an Even Layer
Pour the pecans out onto the baking sheets in an even single layer. Do not overlap the nuts.
4. Bake
Bake the nuts for about 7 minutes, then pull out and stir. Put back in the oven for 7 more minutes. After the second round of baking, pull out and stir one more time. If needed, put back in for 3 to 4 more minutes.
You will want the nuts to get nice and toasty and absorb most of the maple syrup, but be careful not to overdo it or they will burn.
Cool & Package
After the nuts come out of the oven, allow them to sit and cool completely.
Once cooled, pour the roasted pecans into an airtight container.
Storage & Shelf Life
Because of the natural oils in the nuts, homemade roasted nuts will last for two to three weeks at room temperature. If you wish to extend their shelf life, keep them in the refrigerator for up to one month, or the freezer for up to a year.

Roasted Maple Pecans with Chinese Five Spice

- 8 cups pecan halves
- 2 tbsp olive oil
- 2/3 cup maple syrup
- 2 teaspoons sea salt
- 2-3 tablespoons Chinese Five Spice blend
Instructions
- Preheat the oven to 350°F. Line two large baking sheets with parchment paper.
- Add all ingredients to a large mixing bowl. Stir until everything is evenly coated.
- Divide the bowl of pecans across the two baking sheets and spread them out so they are in an even single layer.
- Bake the nuts for 7 minutes, then pull out and stir them. Put them back in the oven for 7 more minutes, then pull out and stir a second time. Then put the pecans back in the oven for 3 to 4 more minutes to finish up. You want them to get toasty and absorb most of the syrup, but do not overcook or burn them–keep an eye on them. If your oven runs hot, you may not need the last 3 to 4 minutes.
- Remove the pecans from the oven and cool completely. Store in an airtight container for up to two weeks at room temperature. For longer storage, keep in the freezer for up to a year.
