Instructions
Prepare the lime by cutting it in half and squeezing the juice from one half into a small bowl or cup (need about 1 ounce of juice). Set the juice aside, then slice the other half of the lime into slices.
Add the blueberries, mint leaves, and lime slices to a tall cocktail glass in layers. Pour the simple syrup over top, then use a muddler or the back of a wooden spoon to mash everything together for about 30 seconds to release the juices and oils.
Pour the lime juice in the glass, followed by the non-alcoholic rum replacement.
Add the desired amount of crushed ice, then top off with a splash of sparkling water. Stir to get everything evenly incorporated. Enjoy!

You can easily make your own simple syrup. Bring 1 cup water and 1 cup organic cane sugar to a boil in a small saucepan. Boil for 1 minute until sugar is fully dissolved. Remove from heat and cool. Store the simply syrup in a mason jar in the refrigerator for up to 1 month.Try this with other fruits, like blackberries or strawberries!Use any non-alcoholic rum replacement you'd like. I used Beckett's 27 NA coconut rum.
