Traeger Smoked Spatchcock Chicken

This simple Traeger Smoked Spatchcock Chicken recipe with homemade citrus rub is juicy, fresh, and has an incredible flavor!

To make this citrus rubbed smoked chicken, you need a whole chicken, orange, lemon, olive oil, & spices.

1. Gather Ingredients

Zest the orange and lemon into a small bowl. Add all of the spices and then stir to combine. Set aside.

2. Prep Rub

Slice the orange and lemon you just zested into 4-6 slices. Set aside--you will be sliding these under the chicken skin after applying the rub.

3. Slice Citrus

Place the chicken breast side down. Use poultry shears to cut down the side of the back bone on both sides to remove it from the chicken.

4. Remove the Backbone

Flip the chicken over and compress the breast plate with your hands. You may need to pull & pry a bit if it's not laying totally flat.

5. Compress the Breast

Rub the chicken with some olive oil, then apply your rub generously. Make sure you get under the chicken skin directly onto the meat, too.

6. Rub the Chicken

Slide citrus slices under the skin on top of the meat on the breasts, thighs, and legs--as many as you can fit.

7. Place Citrus Slices

Place chicken directly on the grill grates and smoke at 225F for 2 hours, then increase the heat to 375F for 30 minutes.

8. Smoke Chicken

Remove the chicken from the Traeger and let it rest 20-30 minutes to redistribute the juices.

9. Remove & Rest
