Preheat your smoker or pellet grill to 225 degrees Fahrenheit per manufacturers instructions.

Pour 1-2 tbsp of olive oil over your chicken and rub it in. Get under the skin where you can.

Add 2-3 tbsp of your favorite poultry seasoning. Rub it all over the outside of your chicken, and get under the skin where you can.

Insert a meat thermometer into the thickest part of the breast. We will be cooking this to 165 degrees.

Put your chicken directly on the smoker grates, breast side up. Close your lid and let it cook for 2.5-3 hrs, until it reaches 165 degrees.

Remove from your smoker when the chicken reaches 165 degrees. Allow it to rest 30 minutes before carving.
