The BEST Healthy Pumpkin Banana Muffins

 These pumpkin banana muffins are the perfect fall treat! They are lower in sugar and made with whole wheat pastry flour for a delicious and nutritous snack.

1. Gather Ingredients

You will need whole wheat pastry flour, pumpkin puree, ripe bananas, eggs, avocado oil, a little bit of sugar, chocolate chips, and spices.

2. Mix Dry Ingredients

Measure your flour into a bowl. Add your baking powder, baking soda, and spices. Whisk to combine. Set aside.

3. Mash Banana

Add your banana to the bowl of your stand mixer. Attach your paddle and mix on medium to mash.

4. Add Wet Ingredients

Add your pumpkin puree to the mixing bowl followed by the sugar, eggs, avocado oil, a little water, and vanilla. Stir until mixed thoroughly.

5. Add Dry Ingredients

Add the flour & spices to your mixing bowl. Stir until just combined. Be careful not to overmix.

6. Scoop Muffins into Tins

Line your muffin tin with paper cups. Using a cookie scoop, add two scoops of batter to each muffin cup (or fill each one 2/3 full).

7. Top with Chocolate Chips

Add 1 tsp of mini chocolate chips on top of each muffin. This is the best part--yum!

8. Bake

Bake at 350 for 22-24 minutes or until a toothpick inserted comes out clean. These muffins are very moist--make sure they are fully baked.

9. Cool

Let your muffins cool in the pan for 10-15 minutes, and then remove them to finish cooling on a wire rack. Enjoy!
