Healthy Tater Tot Hot Dish

A creamy lean beef and veggie filling is topped with a layer of crispy tater tots. The ultimate comfort casserole!

To make this casserole, gather lean beef, tater tots, veggies, seasonings, and some basic roux ingredients.

1. Gather Ingredients

Using a sharp knife or veggie chopper, finely dice the zucchini, bell pepper, and mushrooms. Grate the carrot and mince the garlic.

2. Chop Veggies

In a large skillet, brown your ground beef and drain away any fat. Remove the beef from the skillet and set aside.

3. Brown Meat

Add veggies to the skillet you cooked the beef in. Cook until soft. While veggies are cooking, heat a medium saucepan on another burner and create your roux.

4. Cook Veggies

Add oil & flour to a pot on medium heat. Stir to absorb flour in the oil & cook 1 min. Add water, milk, Better than Bouillon, & seasonings. Cook until thickened.

5. Make Roux

Add the meat back to the skillet with the veggies. Pour in your roux and stir to combine.

6. Combine Casserole Base

Lightly spray a 9x13 baking dish with cooking spray. Pour the meat & veggie mixture in the pan and spread out evenly. Top with tater tots.

7. Assemble Casserole

Bake casserole at 400 degrees F for 20-25 minutes or until tater tots are golden brown. Serve immediately with a dollop of sour cream and some sliced green onion.

8. Bake

This casserole is a complete meal in and of itself with protein, veggies, and carbs. It is a great weeknight meal!
