Smoked Chicken Legs & Chimichurri

Smokey, flavorful, and healthy, these smoked chicken legs have crispy skin with a delightful chimichurri sauce to douse them in!

To make this easy smoker dinner, you need chicken legs, cilantro, parsley, red onion, garlic, jalapeño, olive oil, vinegar, lime juice, spices, & poultry rub.

Gather Ingredients

Pat dry your chicken legs and place on a wire rack on top of a baking sheet. Place in the refrigerator for 2 hours to dry out the skin (this makes it crispy).

1. Prep Chicken

Finely chop the cilantro, parsley, onion, jalapeno, and garlic. Add to a mixing bowl with the olive oil, vinegar, lime juice, and spices. Stir to combine.

2. Make Chimichurri

Preheat Traeger to 180F. Cover the chicken legs in some olive oil and poultry rub of choice.

3. Prep Legs

Place chicken directly on the grill grates and smoke at 180F for 30 minutes. Increase heat to 350F and cook for 30 more minutes.

4. Smoke Chicken

Remove the chicken legs from the grill and serve with the chimichurri sauce. Enjoy!
