Healthy Chicken Sheet Pan Dinner

This Moroccan-Inspired chicken sheet pan dinner is full of fresh flavors!

You need chicken breasts, potatoes, cauliflower, olive oil, olives, lemons & oranges, garlic, ginger, onions, and spices.

1. Gather Ingredients

Trim chicken & place in a ziploc bag or other marinating container. If the chicken breasts are very large, cut them in half. Set the bag aside.

2. Prep Chicken

Zest the lemon and orange, and add the lemon juice and orange juice to the bowl. Follow with the olive oil and spices. Whisk together. Slice leftover lemon and orange.

 3. Make Marinade

Pour marinade over chicken and refrigerate for 30 minutes to 2 hours. About 45 minutes before you want to serve dinner, preheat your oven to 425F.

4. Marinate Chicken

Preheat oven to 425F. Chop your potatoes into 1-inch pieces, slice your onion, and chop your cauliflower into florets.

5. Prep Veggies

Arrange chicken on sheet pan. Use leftover marinade to season the veggies. Arrange veggies around the chicken. Layer citrus slices on top.

6. Prep Sheet Pan

Insert meat thermometer into the thickest chicken breast. Bake pan for 25 min or until chicken reaches internal temp of 165F.

 7. Bake

When chicken reaches 165F, use tongs to remove it from the pan to rest. Put the pan back in the oven and continue cooking until veggies are tender, about 10 min.

8. Remove Chicken
