How to Cook Mashed Potato Squash

Try this creamy, garlicky mashed potato squash recipe to add some variety to your fall dinner plate!

To make this mashed potato squash recipe, gather 3 lbs of white acorn squash, parmesan, cream cheese, salt, pepper, and EVOO.

1. Gather Ingredients

Cut your squash in half and scoop out the seeds. Drizzle 1/2 tsp oil on the inside of each squash half, rub it in, and place them face down on a baking sheet. Bake at 375 for 40 min.

2. Prep Squash

When the squash is done, remove from oven and let cool 10 min. Scoop out the flesh into a large bowl.

3. Scoop our Roasted Squash

Mince or grate a clove of garlic into the mixing bowl, or add 1/2 tsp garlic powder. Add 1/4 tsp each of salt and pepper.

4. Mince Garlic

Add your parmesan and cream cheese. Use a potato masher to mash until smooth, or stir to combine with a spoon.

5. Mash

Spoon the finished mash potato squash into a serving platter. Top with some topped chives or paprika for color.

6. Serve
