This moist & fluffy simple cornbread recipe without milk is perfection! This dairy-free recipe is made with nutty whole grains, honey, & coconut oil.

To make this incredible cornbread recipe, you need cornmeal, whole wheat pastry flour, coconut oil, honey, eggs, sugar, honey, baking powder & soda, & salt.

1. Gather Ingredients

Add your cornmeal, whole wheat pastry flour, baking powder, baking soda, and salt to a medium bowl and whisk together. Set aside.

2. Mix Dry Ingredients

Add your coconut oil to a large microwave-safe bowl and microwave the coconut oil in 30-second intervals until it melts.

3. Melt Coconut Oil

While your coconut oil is melting, crack your eggs into a small bowl and beat them. Set aside.

4. Beat Eggs

Remove your coconut oil from the microwave and add your sugar and honey. Stir to combine, then add 1 cup of water and your beat eggs. Stir together.

5. Combine Wet Ingredients

Add your bowl of dry ingredients to the bowl of wet ingredients. Stir or whisk until few lumps remain.

6. Combine Wet & Dry

Lightly grease a 10-in cast-iron skillet. Pour your cornbread batter into the skillet.

7. Pour in Greased Cast Iron

Bake your cornbread skillet at 375 degrees F for 20 minutes or until a fork comes out clean when inserted.

8. Bake

Let your cornbread cool for about 10 minutes, then serve and enjoy! Great with a spread of butter (or dairy-free alternative) and a drizzle of honey!

9. Enjoy!
