Hearty Irish Pork Stew

This delicious stew incorporates seasonal veggies, tender high-quality pork, Guinness, and caraway seeds for comforting Irish flavors.

Pork roast, cabbage, root veggies, broth, Guinness, spices, and carraway seeds give this stew great flavor.

1. Gather Ingredients

Trim any large pieces of extra fat off the pork roast. Cut into bite size pieces. Place in a container with 1/4 c flour, salt, & pepper. Shake to evenly coat.

2. Prep Pork

Chop potatoes and cabbage into 1-inch pieces. Chop the onion, carrots, celery, and mince the garlic cloves. Set Aside.

3. Prep Veggies

Heat a Dutch oven over medium heat and add 1 tbsp olive oil. Brown your meat, working in batches as needed. Remove meat and set aside.

4. Brown Meat

Add remaining oil and veggies to the pot. Cook until they start to soften. Sprinkle 1/4 c flour over top and stir, cooking 2-3 minutes.

5. Cook Veggies

Pour in the chicken broth to deglaze the pan, scraping the brown bits into the stew. Pour in the bottle of Guinness and balsamic vinegar. Add the caraway seeds and bay leaves.

6. Add Liquids

Assemble the rest of the stew in the pot. Add in this order: Potatoes, followed by cabbage, then pork on top. This will help the pork stay crispy while it stews.

7. Layer Stew

Cook in the Dutch oven at 300 degrees F for 2 1/2 hours, until the pork and potatoes are fork tender.

8. Cook

Remove from the oven and remove the lid. Stir the meat and cabbage into the stew. Serve while hot. Great for St. Patrick's Day!

9. Stir & Serve

Goes great with Irish Soda Bread or any other favorite crusty bread. Makes a large batch that is great to serve to friends and family.
