Hearty Bison Chili with Roasted Vegetables

This zesty chili features tender bison meat, roasted vegetables, and an array of smokey spices to make this one of the most flavorful chilis you've ever made!

Gather Ingredients

Ground bison, canned tomato & pepper products, bell pepper, zucchini, corn, onion, garlic, & spices


1. Preheat Oven

Preheat your oven to 425 degrees F. You will be using it to roast some delcious vegetables!

2. Prep Veggies

Chop your bell pepper into large slices and the zucchini into strips and place on baking sheet. Spread your corn in an even layer. Spread olive oil onto your veggies.

3. Roast for 25 min

When the oven is preheated, roast veggies for 25-30 min or until charred. When done, remove from oven and set aside until cool enough to handle.

4. Prep onion & garlic

Peel your onion and garlic. Dice your onion into small pieces and mince your garlic. Set aside.

5. Brown Bison Meat 

Heat a large soup pot to medium heat. Add your ground bison. Cook meat until browned. Remove from pot.

6. Cook Onion & Garlic

Add 1 tbsp olive oil to your stock pot followed by the onion & garlic. Cook until soft.

7. Add Everything to Pot Except Veggies

Add your bison back, followed by everything except the roasted veggies. Stir and bring to a simmer.

8. Chop Veggies

When your veggies are cool enough to handle, chop them into bite size pieces. Add them to your chili pot.

9. Simmer for 1 Hour

Cover your chili and allow it to simmer for 1 hour to develop flavor. Stir periodically.
