Easy Sheet Pan Caprese Chicken & Gnocchi

Juicy, tender chicken breast, roasted cherry tomatoes, crispy gnocchi, and melty cheese covered in fresh basil with a sweet balsamic glaze.

To make this super easy & healthy sheet pan meal, gather chicken, tomatoes, mozzarella, gnocchi, basil, olive oil, lemon juice, garlic, and balsamic glaze.

1. Gather Ingredients

Add chicken breasts, olive oil, lemon juice, and some Italian seasoning to a ziploc bag or marinating container. Marinate chicken for 30 min to 2 hours.

2. Marinate Chicken

Add tomatoes, gnocchi, and roughly chopped garlic cloves to a mixing bowl. Drizzle with olive oil & Italian seasoning. Toss to combine.

3. Prep Gnocchi & Veg

Space chicken out evenly on sheet pan, then pour the tomatoes, gnocchi, and garlic around it in an even layer.

4. Assemble Sheet Pan

Bake at 400F for 10 minutes, then remove to add a layer of fresh mozzarella. Put back in the oven for 10-12 more minutes, until cheese is melty and chicken is 165F internal temp.

5. Bake

Stack basil leaves on top of each other and roll them up. Chop fresh basil into ribbons to sprinkle on the sheet pan when it is done cooking.

7. Chop Basil

Drizzle balsamic glaze on top of the sheet pan after you remove it from the oven. Sprinkle with basil and serve.

8. Drizzle with Balsamic Glaze

Serve immediately with a green salad. This is a super easy and quick dinner everyone in the family will love!
