Birria Enchiladas

These birria enchiladas are delicious and easy to make! With simple instructions, you will have a healthy and satisfying dinner any night of the week.

You will need a lean beef roast, beef broth, chili powders and spices, onion, chipotle peppers, lime juice, cilantro, cheese, garlic & tortillas.

1. Gather Ingredients

Blend together the chipotle peppers in adobo, onion, garlic, chili powders, spices, lime juice, and beef broth.

2. Prep Sauce

Use a 2-3 lb lean beef roast for this recipe. Trim fat off the beef roast and cut into 4 equal pieces for even cooking.

3. Prep Beef

Heat up your Instant Pot with the saute button. Add 1 tbsp evoo and your beef pieces, browning each side.

4. Brown Beef

Turn off the pot and pour your sauce in. Press "Pressure Cook" and cook roast for 20 min per lb. Add 10-15 minute gradual release at the end of cooking time.

5. Pressure Cook

Shred on a cutting board. Ladle a scoop of the sauce into a small bowl with 2 tbsp arrowroot powder. Whisk to combine, then whisk into the full pot. Add beef back to pot.

6. Shred Beef & Thicken Sauce

Ladle some sauce into the bottom of a baking pan. Assemble enchiladas with meat, cheese, cilantro, and onion. Layer them in the pan.

7. Prep Enchiladas

Bake enchiladas at 350F for 15-20 minutes until the cheese is sufficiently melty. They are ready to serve!
