Cranberry Wild Rice Bread

This delicious and festive cranberry wild rice bread will be a hit at your holiday gathering!

You will need whole wheat flour, all purpose flour, yeast, water, milk, butter, honey, an egg, cooked wild rice, and dried cranberries.

1. Gather Ingredients

Add warm water to the mixing bowl with a tsp of honey. Add your packet of yeast and let sit until foamy.

2. Proof Yeast

Once the yeast is foamy, add the milk, melted butter, honey, and the egg. Stir to mix.

3. Add Wet Ingredients

Add your flours and salt to the mixing bowl. Stir to create a shaggy dough. Let the dough rest 15 minutes before starting to knead.

4. Add Dry Ingredients

Knead the dough for 10-15 minutes, or until your dough develops sufficient gluten structure (window pane test).

5. Knead

Cover your dough with a tea towel and let it rise at room temperature for 2 hours or until doubled.

6. Rise

Pour dough out onto a clean, lightly floured work surface. Shape dough into a loaf or into balls for rolls.

7. Shape

Let rise for 1-2 hours or until double in the loaf pan. Toward the end of the rise, preheat oven to 350 degrees.

8. Second Rise

Bake at 350 for 40-45 minutes for a loaf or 30-35 minutes for rolls. Bread is done when a thermometer inserted reads 190 degrees Fahrenheit.
