Sour Cream & Onion Bison Chuck Roast

This slow cooker bison chuck roast recipe is the perfect way to enjoy this tender & nutritious roast. This dish with its creamy and tangy gravy is packed with protein and iron, making it a great meal for the whole family.

1. Gather Ingredients

You will need a 2-4 lb bison chuck roast, root veggies, dried herbs & spices, olive oil, beef stock, cornstarch and lite sour cream.

2. Sear Roast 

Add your olive oil and roast to your crockpot on the stove top setting, or use a large skillet on your stove. Sear the meat on medium-high heat, 2-3 minutes per side. Remove from pot when finished.

3. Chop Onion

While your meat is searing, peel and slice your onion. When the meat is done searing, remove it and add your onion to the pot to cook until golden and soft.

4. Whisk Spices

Add your spices to a small bowl and whisk together. Set aside.

5. Prep Veggies

Slice your carrots into coins. If your potatoes are larger than a golf ball, half or quarter them so they cook more easily in the crock pot.

6. Add it all to the Pot

When the onions are soft, add the meat back to the pot, followed by the seasonings, broth, potatoes, carrots, and bay leaf. Set your crock pot to low for 8 hours.

7. Plate Your Roast

When the cook time is over, remove the roast and slice it. Scoop out potatoes and carrots. Measure out 1 tbsp of cornstarch into a small bowl and add 1/2 cup of the meat juices.

8. Make Gravy

Whisk the cornstarch and juices together until smooth. Then add it to the rest of the juices in the pot and simmer for 2-3 minutes (do this in a pot on the stove if your crock pot can't do this).

9. Serve
