100% Whole Wheat Bread with Fresh Milled Flour

Nutritious, soft, and delicious, this whole wheat bread with fresh milled flour is a great beginner recipe.

Wheat berries, water, olive oil, lemon juice, honey, yeast, an egg, and salt are all we need to make this delicious loaf.

1. Gather Ingredients

Grind your wheat berries using whatever method you have available to you. You need 500 grams of finished flour. Fine flour is best.

2. Mill Flour

Add water to the freshly milled flour and stir to mix until there are no dry flour bits left. Cover and let sit (called an autolyze) for 30-60 minutes.

3. Autolyze

Add the egg, oil, honey, salt, lemon juice, and yeast. Mix until combined, then switch to the dough hook to knead 15 min until "window pane" (see recipe for more info)

4. Mix & Knead

Cover and set aside to rise in a warm place until doubled. This usually takes about 1 1/2 to 2 hours.

5. Rise

Pour dough out onto a clean surface. Shape into a loaf and put in a bread pan to proof (see recipe for more info)

6. Shape

Cover with a damp tea towel and let proof in a warm spot for about 1-1 1/2 hours until poofy.

7. Proof

Once loaf is puffy and fills out the pan nicely, bake at 350F for 40 min. The loaf is done when it reaches an internal temperature of 190F.

8. Bake

Put a small amount of butter on the crust if desired. Allow to cool 10 min in the pan, then remove to cooling rack. Slice when completely cooled.

9. Cool
